Ingredients

2 cups fresh figs, stems removed and quartered

1 cup vegetable broth

1 cup coconut milk (or heavy cream for a richer texture)

1 medium onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon honey (optional, adjust based on fig sweetness)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon lemon juice

Fresh parsley or mint for garnish

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5–7 minutes. Stir in the minced garlic and cook for an additional 1–2 minutes, being careful not to burn it.

Cook Figs: Add the quartered figs to the pot and cook for 3–4 minutes, allowing them to soften. Stir regularly to prevent sticking.

Broth and Seasoning: Pour in the vegetable broth and bring the mixture to a gentle simmer. Add the thyme, honey (if using), and season with salt and pepper. Simmer for about 10 minutes, allowing the flavors to meld.

Blend the Soup: Remove the pot from heat. Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup in batches to a countertop blender; just be cautious with hot liquids.

Add Creaminess: Return the blended soup to the pot over low heat. Stir in the coconut milk (or heavy cream) and lemon juice. Continue to heat gently for another 5 minutes to warm through, adjusting seasoning as necessary.

Serve: Ladle the creamy fig jam soup into bowls, and garnish with chopped fresh parsley or mint for a burst of color and flavor.
