Creamy Corn & Bacon Dip

Ingredients
  

2 cups fresh or frozen corn kernels

6 slices of bacon, chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, sliced (for garnish)

Tortilla chips or sliced baguette (for serving)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 8-10 minutes. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess fat. Leave 1 tablespoon of bacon grease in the skillet.

    Sauté the Corn: In the same skillet with the reserved bacon grease, add the corn kernels. Sauté for 5-7 minutes until they are slightly caramelized and heated through. Remove from heat and let cool for a couple of minutes.

      Mix the Dip: In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and well combined.

        Season the Mix: Add the cheddar cheese, garlic powder, onion powder, smoked paprika, and season with salt and pepper. Mix well to ensure everything is evenly incorporated.

          Combine Ingredients: Gently fold in the sautéed corn and cooked bacon into the cream cheese mixture until evenly distributed.

            Bake (Optional): Preheat the oven to 350°F (175°C). Transfer the dip into a baking dish and bake for 15-20 minutes until heated through and slightly golden on top.

              Serve: Remove the dip from the oven, let it cool slightly, and garnish with sliced green onions. Serve warm with tortilla chips or sliced baguette for dipping.
