Creamy Corn & Avocado Salsa

Ingredients
  

1 cup sweet corn kernels (fresh, frozen, or canned)

2 ripe avocados, diced

1 medium red onion, finely chopped

1 medium red bell pepper, diced

1 small jalapeño, finely chopped (seeds removed for less heat)

1/4 cup fresh cilantro, chopped

1/2 cup Greek yogurt (or sour cream)

Juice of 2 limes

Salt and pepper, to taste

Optional: Crumbled feta cheese for garnish

Instructions
 

Prepare the Corn: If using fresh corn, cook the corn ears in boiling water for about 5-7 minutes until tender. Let cool and cut the kernels off the cob. For frozen corn, simply thaw it. If using canned corn, drain and rinse.

    Combine Veggies: In a large mixing bowl, combine the corn, diced avocados, chopped red onion, diced red bell pepper, and jalapeño.

      Make the Creamy Dressing: In a separate small bowl, mix the Greek yogurt, lime juice, salt, and pepper until smooth and well combined.

        Mix Together: Pour the creamy dressing over the corn and avocado mixture. Gently fold everything together until well coated. Be careful not to mash the avocados too much.

          Add Fresh Herbs: Fold in the chopped cilantro for added flavor.

            Taste and Adjust: Taste the salsa and adjust the seasoning if needed, adding more salt, pepper, or lime juice according to your preference.

              Serve: Transfer the salsa to a serving bowl and, if desired, sprinkle crumbled feta cheese on top. Serve immediately with tortilla chips, as a topping for tacos, or alongside grilled meats.
