1 lb (450g) boneless, skinless chicken breasts, thinly sliced

1 tablespoon olive oil

1 medium onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper, to taste

1 cup (240ml) heavy cream

1 cup (100g) shredded cheddar cheese

1 tablespoon lime juice

Fresh cilantro, for garnish

Tortillas, for serving

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken and season with salt and pepper. Cook until the chicken is golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the onion, red bell pepper, and yellow bell pepper. Sauté for 3-4 minutes until the vegetables are tender. Stir in the minced garlic, chili powder, cumin, and paprika; cook for an additional minute until fragrant.

      Make it Creamy: Lower the heat to medium-low, add the cooked chicken back to the skillet, and pour in the heavy cream. Stir well to combine all the ingredients. Let it simmer for 3-4 minutes until the sauce thickens slightly.
