1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon black pepper

4 cups low-sodium chicken broth

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup uncooked long-grain white rice

1 cup heavy cream

1 tablespoon lemon juice

Fresh parsley for garnish

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the onion is translucent (about 5 minutes) and the veggies soften.
