Creamy Chicken and Rice Casserole

2 cups cooked chicken, shredded or diced

1 cup uncooked long-grain white rice

2 cups chicken broth

1 cup heavy cream

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon black pepper

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon salt (or to taste)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Veggies: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the chopped onions and sauté until they become translucent (about 3-4 minutes). Add the minced garlic and sauté for another 1 minute or until fragrant.

      Combine Ingredients: In a large mixing bowl, combine the cooked chicken, uncooked rice, sautéed onions and garlic, chicken broth, heavy cream, mixed vegetables, dried thyme, dried oregano, onion powder, garlic powder, and black pepper. Stir well until all ingredients are thoroughly mixed.

        Prepare the Baking Dish: Grease a 9x13-inch casserole dish with a little olive oil or cooking spray. Pour the chicken and rice mixture into the prepared dish, spreading it out evenly.

          Add Cheese: Sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly on top of the casserole mixture.

            Cover and Bake: Cover the casserole dish tightly with aluminum foil. Bake in the preheated oven for 30 minutes.

              Uncover and Brown: After 30 minutes, carefully remove the foil and return the casserole to the oven. Bake for an additional 15-20 minutes or until the cheese is bubbly and slightly golden brown.

                Garnish and Serve: Remove from the oven and let it rest for 5-10 minutes. Garnish with fresh parsley if desired. Serve warm and enjoy!
