Creamy Chicken and Mushroom Pasta Bake

300g fusilli pasta

2 tablespoons olive oil

1 onion, finely chopped

2 garlic cloves, minced

300g chicken breast, diced

250g mushrooms, sliced (button or cremini work well)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

300ml chicken broth

200ml heavy cream

100g grated Parmesan cheese

150g mozzarella cheese, grated

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 200°C (400°F).

    Cook the Pasta: In a large pot of boiling salted water, cook the fusilli pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Add Chicken and Mushrooms: Stir in the diced chicken and cook until browned, about 5-7 minutes. Add the sliced mushrooms, dried thyme, and oregano, and season with salt and pepper. Cook for another 5 minutes until the mushrooms are softened.

          Prepare the Sauce: Pour in the chicken broth and bring to a gentle simmer. Reduce the heat to low, and stir in the heavy cream. Let it simmer for 2-3 minutes to thicken slightly.

            Combine with Pasta: Add the cooked pasta to the skillet, gently mixing it with the chicken and mushroom sauce. Taste for seasoning and adjust if necessary.

              Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch (or similar size) baking dish. Spread it evenly.

                Add Cheese Topping: Sprinkle the grated Parmesan and mozzarella cheese evenly over the top of the pasta bake.

                  Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
