Creamy Chicken and Bacon Pasta

12 oz (340g) fettuccine or pasta of your choice

2 tablespoons olive oil

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

6 slices of bacon, chopped

1 small onion, finely chopped

3 cloves garlic, minced

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped for garnish

Optional: 1 cup (150g) cherry tomatoes, halved

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta cooking water.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain, reserving the bacon grease in the skillet.

      Sauté the Chicken: In the same skillet with the remaining bacon grease, increase the heat to medium-high. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté Onions and Garlic: In the same skillet, lower the heat to medium and add the chopped onion. Sauté until translucent, about 3-4 minutes. Add the minced garlic and Italian seasoning, cooking for an additional 1-2 minutes until fragrant.

          Make the Sauce: Pour the heavy cream into the skillet, stirring to combine. Gradually add the grated Parmesan cheese, stirring continuously until the cheese melts and the sauce is creamy and smooth. If the sauce is too thick, add some of the reserved pasta water to achieve your desired consistency.

            Combine: Add the cooked chicken and bacon back into the skillet, along with the cooked pasta. Toss everything together until well coated in the creamy sauce. If using, add the cherry tomatoes for extra flavor and a pop of color.

              Serve and Garnish: Serve the creamy chicken and bacon pasta hot, garnished with fresh chopped parsley and additional grated Parmesan cheese if desired.
