Ingredients

12 oz cheese tortellini (fresh or frozen)

1 tbsp olive oil

8 oz Andouille sausage, sliced

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14.5 oz) diced tomatoes with green chilies

1 cup heavy cream

1 cup chicken broth

2 tsp Cajun seasoning (adjust to taste)

1 cup shredded sharp cheddar cheese

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions until al dente. Drain and set aside.

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 4-5 minutes. Remove the sausage from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until they become soft. Add the minced garlic and cook for an additional minute until fragrant.

Combine Ingredients: Pour in the can of diced tomatoes with green chilies (including the juice), chicken broth, and heavy cream. Stir in the Cajun seasoning and season with salt and pepper to taste. Bring the mixture to a gentle simmer.

Add the Tortellini: Once the sauce is simmering, add the cooked tortellini back into the skillet along with the browned Andouille sausage. Stir to combine, allowing the tortellini to soak up the delicious sauce for about 2-3 minutes.

Incorporate Cheese: Gradually add the shredded cheddar cheese, stirring continuously until melted and creamy. Adjust seasoning if necessary.

Serve and Garnish: Once everything is well combined, serve hot. Garnish with sliced green onions and fresh parsley for a pop of color and flavor.
