8 oz fettuccine pasta (or pasta of choice)

1 lb shrimp, peeled and deveined

8 oz Andouille sausage, sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

2 tablespoons Cajun seasoning (adjust to taste)

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Sauté the Sausage: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced Andouille sausage and sauté until browned (about 4–5 minutes). Remove the sausage from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the remaining tablespoon of olive oil and the butter. Once melted, add the shrimp. Season with a pinch of salt, pepper, and a sprinkle of Cajun seasoning. Cook the shrimp for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp and place with the sausage.

        Sauté Vegetables: In the same skillet, add the chopped onion, garlic, and bell peppers. Sauté until the vegetables are soft (about 5-7 minutes). Add the cherry tomatoes and cook for an additional 2 minutes until they start to soften.

          Make the Sauce: Pour in the chicken broth and heavy cream, stirring well. Bring the mixture to a gentle simmer. Stir in the remaining Cajun seasoning, adjusting to taste. Allow the sauce to thicken slightly, about 3-5 minutes.

            Combine: Add the cooked pasta to the skillet along with the shrimp and sausage. Toss everything together ensuring the pasta is well-coated in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired creaminess is achieved.

              Serve: Remove from heat, and season with additional salt and pepper if necessary. Serve hot, garnished with fresh parsley and a generous sprinkle of grated Parmesan cheese.
