Creamy Cajun Shrimp Pasta

8 oz fettuccine or penne pasta

1 lb large shrimp, peeled and deveined

2 tbsp Cajun seasoning, divided

2 tbsp olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, sliced

1 cup heavy cream

1/2 cup chicken broth

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Cook the pasta: Bring a large pot of salted water to a boil. Add the fettuccine or penne and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prepare the shrimp: In a medium bowl, season the shrimp with 1 tablespoon of Cajun seasoning, making sure to coat them evenly.

      Sauté the shrimp: In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the shrimp and sauté for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

        Cook the vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the garlic and onion until fragrant and translucent, about 2-3 minutes. Add the red bell pepper and cook for an additional 2 minutes until softened.

          Make the creamy sauce: Pour in the chicken broth and scrape up any brown bits from the bottom of the skillet. Allow it to simmer for about 2 minutes before adding the heavy cream, the remaining tablespoon of Cajun seasoning, and the cherry tomatoes. Stir to combine and let it simmer for another 3-4 minutes until the sauce thickens slightly.

            Add the pasta and shrimp: Return the cooked pasta and shrimp to the skillet. Toss everything together, adding a bit of the reserved pasta water if the sauce is too thick. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

              Finish and serve: Remove from heat and garnish with chopped parsley. Serve the creamy Cajun shrimp pasta warm, and enjoy a taste of the South!
