Ingredients

8 ounces of pasta (fettuccine or tagliatelle work great)

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

Salt and pepper, to taste

8 ounces burrata cheese

Fresh basil leaves, for garnish

Zest of 1 lemon (for added freshness)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, but be careful not to burn the garlic.

Add Tomatoes: Toss in the halved cherry tomatoes and season with a pinch of salt and pepper. Cook for about 3-4 minutes until the tomatoes soften and start to burst.

Make the Cream Sauce: Lower the heat and add the heavy cream to the skillet. Stir to combine, then add the Parmesan cheese, stirring until melted and the sauce is creamy. If the sauce is too thick, gradually add reserved pasta water until desired consistency is achieved.

Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss until the pasta is coated in the creamy sauce. Taste and adjust seasoning with more salt, pepper, and red pepper flakes if needed.

Plate the Dish: Divide the pasta among serving plates. Tear the burrata into pieces and place on top of each serving.

Final Touches: Finish with fresh basil leaves, a sprinkle of lemon zest for brightness, and an extra drizzle of olive oil if desired.

Serve: Enjoy your creamy burrata pasta immediately while it's warm and creamy!
