Ingredients

8 ounces pasta of your choice (penne or rotini recommended)

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream or full-fat coconut milk

1/2 cup buffalo sauce (adjust to taste)

1 teaspoon smoked paprika

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup shredded cheddar cheese (optional)

Fresh parsley, chopped for garnish

Instructions

Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and continue to cook for another 1-2 minutes, until fragrant.

Prepare the Chickpeas: Add the drained chickpeas to the skillet. Cook for about 3-4 minutes until they start to get slightly crispy and golden.

Make the Sauce: Pour in the vegetable broth, then add the heavy cream or coconut milk, buffalo sauce, smoked paprika, onion powder, and season with salt and pepper. Stir to combine and bring to a gentle simmer.

Combine Pasta and Sauce: Add the cooked pasta to the skillet. Mix everything well, ensuring the pasta is coated with the creamy buffalo sauce. If using, add the shredded cheddar cheese for extra creaminess and stir until melted.

Garnish and Serve: Take the skillet off the heat. Serve the pasta immediately, garnished with fresh chopped parsley and additional buffalo sauce if desired.
