Creamy Broccoli Rice Casserole

1 cup uncooked brown rice

2 cups vegetable broth

3 cups fresh broccoli florets

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup shredded sharp cheddar cheese

½ cup grated parmesan cheese

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt

½ teaspoon dried thyme

½ teaspoon onion powder

½ cup breadcrumbs (optional, for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a saucepan, combine the brown rice with vegetable broth. Bring it to a boil, then reduce to a simmer, cover, and cook for about 40-45 minutes, or until the rice is tender and the liquid is absorbed.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté for about 3-4 minutes until the onions are translucent.

        Add Broccoli: Stir in the broccoli florets and cook for an additional 4-5 minutes until vibrant and slightly tender.

          Prepare the Creamy Mixture: In a bowl, whisk together heavy cream, cheddar cheese, parmesan cheese, paprika, black pepper, salt, thyme, and onion powder until smooth.
