2 cups vegetable broth or water

2 tablespoons olive oil

1 small onion, chopped

3 cloves garlic, minced

2 cups broccoli florets

1 cup heavy cream or coconut cream

1 cup shredded cheese (cheddar or a dairy-free alternative)

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon crushed red pepper flakes (optional)

¼ cup freshly grated Parmesan cheese (optional for garnish)

Fresh parsley or chives for garnish

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the liquid is absorbed. Remove from heat and fluff with a fork.

    Prepare the Veggies: While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
