Creamy Broccoli Cheese Soup

4 cups fresh broccoli florets

1 cup chopped yellow onion

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 cups shredded sharp cheddar cheese

1 teaspoon olive oil

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

½ teaspoon smoked paprika (optional)

2 tablespoons all-purpose flour (optional, for thicker soup)

Fresh chives or parsley for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Cook Broccoli: Add the broccoli florets to the pot, stirring to combine with the onions and garlic. Cook for another 3-4 minutes, allowing the broccoli to soften slightly.

      Add Broth: Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low and allow it to simmer for about 15 minutes, or until the broccoli is tender.

        Blend Soup: Remove the pot from heat and using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half the soup or use a blender to puree just a portion while leaving some broccoli bits intact.

          Stir in Cream & Cheese: Return the pot to low heat. Slowly stir in the heavy cream, followed by the shredded cheddar cheese, mixing until the cheese is completely melted and the soup is creamy.

            Season & Thicken (if desired): Taste the soup and add salt, black pepper, and smoked paprika to your preference. If you like a thicker soup, whisk together the flour with a splash of water to make a slurry, and stir it into the soup. Allow it to cook for an additional 5 minutes to thicken.

              Serve: Ladle the creamy broccoli cheese soup into bowls and garnish with freshly chopped chives or parsley if desired. Serve hot with crusty bread or crackers.
