Creamy Baked Macaroni and Cheese

8 ounces elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup cream cheese, softened

3 cups milk (whole or 2% works best)

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

1 cup panko breadcrumbs

2 tablespoons olive oil

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute to form a roux. Gradually add in the milk, whisking constantly to avoid lumps. Cook until the mixture thickens and bubbles, about 5-7 minutes.
