8 oz (225 g) spaghetti or fettuccine pasta

2 ripe avocados, pitted and peeled

1 cup cooked chicken, shredded or diced

1/2 cup heavy cream

1/4 cup freshly squeezed lime juice (about 2 limes)

Zest of 1 lime

2 cloves garlic, minced

1/4 cup grated Parmesan cheese

1/4 cup fresh cilantro, chopped (plus more for garnish)

Salt and pepper to taste

1 tablespoon olive oil

Cherry tomatoes, halved (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Blend the Sauce: In a food processor or blender, combine the avocados, heavy cream, lime juice, lime zest, minced garlic, and Parmesan cheese. Blend until smooth and creamy. If the sauce is too thick, slowly add a bit of reserved pasta water until you reach the desired consistency.

      Combine Chicken and Sauce: In a large skillet, heat olive oil over medium heat. Add the cooked chicken and sauté for about 2-3 minutes until heated through. Pour the creamy avocado sauce over the chicken and stir to combine.
