2 ripe avocados, halved and pitted

1 cup fresh cilantro leaves, packed

2 cloves garlic, minced

1 cup heavy cream or a dairy-free alternative

1 tablespoon lime juice

1 teaspoon lime zest

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese (optional)

Toppings: additional cilantro, toasted pine nuts, or a squeeze of lime

Cook the Pasta: In a large pot of salted boiling water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare the Avocado Sauce: In a blender or food processor, add the avocados, cilantro leaves, minced garlic, heavy cream, lime juice, lime zest, and red pepper flakes (if using). Blend until smooth and creamy. If the sauce is too thick, add some reserved pasta water gradually until you reach your desired consistency. Season with salt and pepper to taste.
