Ingredients

2 cups cooked white rice (or brown rice for a healthier option)

2 cups cooked, shredded chicken (rotisserie chicken works well)

1 can (10.5 oz) cream of mushroom soup

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded cheddar cheese

½ cup bread crumbs (optional for topping)

2 tablespoons olive oil or melted butter (for topping, if using bread crumbs)

Fresh parsley (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or butter.

Mix the Base: In a large mixing bowl, combine the cooked rice, shredded chicken, cream of mushroom soup, cream of chicken soup, and sour cream. Stir until thoroughly mixed.

Add Chicken Broth: Slowly add in the chicken broth and mix well until the mixture is creamy. If the mixture seems too thick, add a little more broth until desired consistency is reached.

Season: Add the garlic powder, onion powder, salt, pepper, and frozen mixed vegetables. Fold gently to combine, ensuring the vegetables are evenly distributed throughout the mixture.

Pour into Dish: Transfer the mixture into the prepared baking dish and spread it evenly.

Add Cheese: Sprinkle the shredded cheddar cheese evenly on top of the casserole.

Topping (Optional): If you’re using bread crumbs, combine them with olive oil or melted butter in a small bowl to coat. Then sprinkle them over the cheese layer for a crispy topping.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes or until the casserole is bubbly and the cheese is golden and melted.

Garnish: Once out of the oven, let the casserole sit for about 5 minutes before serving. Garnish with fresh parsley for a pop of color.

Serve and Enjoy: Dish out generous portions and enjoy the creamy, comforting flavors of this angelic chicken and rice casserole!
