Cozy Sweet Potato & Turkey Bake

2 medium sweet potatoes, peeled and diced

1 lb ground turkey

1 cup chopped onion

2 cloves garlic, minced

1 cup diced bell pepper (any color)

1 cup fresh spinach, chopped

1 teaspoon smoked paprika

1 teaspoon dried thyme

½ teaspoon ground cumin

½ teaspoon black pepper

1 teaspoon salt (adjust to taste)

1 cup shredded cheese (cheddar or mozzarella)

1 can (15 oz) diced tomatoes, drained

1 tablespoon olive oil

Fresh parsley, chopped (for garnishing)

Instructions
 

Preheat the oven to 375°F (190°C).

    Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper, sautéing until softened, about 5 minutes.

      Cook the turkey: Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, approximately 7-10 minutes. Drain any excess fat if necessary.

        Season the mixture: Stir in the smoked paprika, dried thyme, ground cumin, black pepper, and salt. Mix well to evenly coat the turkey mixture with the spices.

          Add sweet potatoes & spinach: Fold in diced sweet potatoes, chopped spinach, and drained diced tomatoes. Stir everything together until the sweet potato is evenly distributed.

            Transfer to a baking dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out into an even layer.

              Top with cheese: Sprinkle the shredded cheese evenly over the top of the sweet potato and turkey mixture.

                Cover and bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden brown.

                  Garnish and serve: Remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
