1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth (low-sodium)

1 can (14.5 oz) diced tomatoes, undrained

1 cup carrots, sliced

1 cup celery, diced

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

9 oz fresh or frozen cheese tortellini

4 cups fresh spinach (or baby spinach)

1 tablespoon olive oil

Grated Parmesan cheese, for serving (optional)

Crusty bread, for serving (optional)

Sauté the Vegetables and Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook for about 5 minutes until they begin to soften. Stir in the minced garlic and cook for an additional minute.

    Cook the Sausage: Add the Italian sausage to the pot, breaking it apart with a spoon. Cook until browned and cooked through, about 6-8 minutes. Drain any excess grease if necessary.
