Cozy Crockpot Turkey Pumpkin Chili

1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) pumpkin puree

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juices)

1 cup low-sodium chicken broth

2 tbsp chili powder

1 tbsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

Optional toppings: sour cream, shredded cheese, cilantro, and pumpkin seeds

Instructions
 

Brown the Turkey: In a skillet over medium heat, brown the ground turkey until fully cooked, about 5-7 minutes. Drain excess fat and transfer turkey to the crockpot.

    Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes. Add to the crockpot with the turkey.

      Add the Pumpkin & Beans: Stir in the pumpkin puree, black beans, kidney beans, diced tomatoes (with their juices), and chicken broth.

        Season the Chili: Sprinkle the chili powder, cumin, smoked paprika, oregano, cayenne pepper, and a generous pinch of salt and pepper over the mixture. Stir everything together until well combined.

          Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors meld and the chili thickens.

            Taste & Adjust: Once ready, taste and adjust seasonings if necessary. If the chili is too thick, add a bit more chicken broth to reach your desired consistency.

              Serve: Ladle into bowls and garnish with your choice of sour cream, shredded cheese, cilantro, or pumpkin seeds for added texture and flavor.
