Cowboy Butter Chicken Linguine

12 oz linguine pasta

1 lb chicken breast, boneless and skinless, cut into bite-sized pieces

1/2 cup unsalted butter (1 stick)

4 cloves garlic, minced

1/2 cup fresh parsley, chopped

2 tbsp fresh chives, chopped

1 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp smoked paprika

1 tsp cayenne pepper (adjust to taste)

1/2 tsp black pepper

1/2 tsp salt (or to taste)

1/2 cup grated Parmesan cheese

Juice of 1 lemon

Lemon wedges for serving

Optional: Red pepper flakes for garnish

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the linguine and set aside.

    Prepare the Chicken: In a large skillet over medium-high heat, melt 2 tbsp of butter. Once melted and hot, add the chicken pieces in a single layer. Season with salt and black pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Make the Cowboy Butter Sauce: In the same skillet, add the remaining 6 tbsp of butter. Reduce the heat to medium-low and add minced garlic, cooking for about 1-2 minutes or until fragrant. Be careful not to burn the garlic.

        Flavor the Sauce: Stir in the Worcestershire sauce, Dijon mustard, smoked paprika, cayenne pepper, chopped parsley, and chives. Let it simmer for another 2-3 minutes to blend the flavors.

          Combine Pasta and Chicken: Return the cooked chicken to the skillet with the sauce. Add the drained linguine and toss everything together until the pasta is well-coated with the cowboy butter sauce. If the pasta seems dry, add reserved pasta water, a little at a time, until you reach your desired consistency.

            Finish It Off: Squeeze the juice of one lemon over the pasta, then sprinkle in the grated Parmesan cheese. Toss once more to combine everything thoroughly.
