Couscous Bowls with Lemon Feta Dressing

Ingredients
  

For the Couscous:

1 cup couscous

1 ¼ cups vegetable or chicken broth

1 tablespoon olive oil

Salt and pepper to taste

For the Vegetables:

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (red or yellow), diced

½ red onion, finely chopped

1 cup cooked chickpeas (canned or freshly cooked)

¼ cup fresh parsley, chopped

For the Lemon Feta Dressing:

½ cup crumbled feta cheese

¼ cup extra virgin olive oil

Juice of 1 large lemon

1 teaspoon lemon zest

1 teaspoon honey (optional for sweetness)

Salt and pepper to taste

For Garnish:

Additional crumbled feta

Lemon wedges

Extra parsley or mint leaves

Instructions
 

Prepare the Couscous:

    - In a medium saucepan, bring the vegetable or chicken broth to a boil.

      - Once boiling, remove from heat, stir in the couscous, olive oil, and a pinch of salt. Cover and let it sit for about 5 minutes until the couscous absorbs all the liquid. Fluff with a fork and set aside.

        Sauté the Vegetables:

          - In a large skillet over medium heat, add a drizzle of olive oil.

            - Sauté the red onion for about 2-3 minutes until it softens.

              - Add the bell pepper and cook for another 3-4 minutes. Then add the cherry tomatoes and cook until slightly blistered.

                - Season the vegetables with salt and pepper. Remove from heat.

                  Prepare the Lemon Feta Dressing:

                    - In a small bowl, whisk together crumbled feta, olive oil, lemon juice, lemon zest, and honey (if using).

                      - Season the dressing with salt and pepper to taste.

                        Assemble the Bowls:

                          - In serving bowls, start with a base of couscous.

                            - Top with the sautéed vegetables, diced cucumber, and chickpeas.

                              - Drizzle generously with the lemon feta dressing.

                                Garnish:

                                  - Sprinkle additional crumbled feta on top and add lemon wedges and fresh parsley or mint leaves for a burst of color and flavor.
