Cottage Cheese Egg Bites

1 cup cottage cheese (preferably low-fat)

6 large eggs

1 cup fresh spinach, chopped

½ cup cherry tomatoes, quartered

½ cup bell pepper, diced (any color)

½ cup shredded cheese (cheddar or mozzarella)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh herbs (such as chives or parsley) for garnish

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or a little olive oil. This will help prevent the egg bites from sticking.

    Blend Cottage Cheese: In a mixing bowl, add the cottage cheese and eggs. Use a blender or whisk to blend until smooth and well combined. This will create a creamy mixture.

      Add Vegetables: Fold in the chopped spinach, quartered cherry tomatoes, diced bell pepper, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix thoroughly to ensure the vegetables and seasoning are evenly distributed.

        Fill Muffin Tin: Pour the mixture evenly into the greased muffin tin, filling each cup about ¾ full to allow for rising while baking.

          Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the edges are set and the centers are slightly puffed. A toothpick inserted should come out clean.

            Cool and Serve: Allow the egg bites to cool in the muffin tin for about 5 minutes, then gently run a knife around the edges to help release them. Carefully pop them out and serve warm, garnished with fresh herbs if desired.

              Storage: If you have leftovers, let them cool completely, then store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for a quick breakfast or snack!
