2 cups cottage cheese (preferably low-fat or full-fat)

6 large eggs

1 cup spinach (fresh or frozen, chopped)

1 medium onion (finely chopped)

1 bell pepper (diced, any color)

1 cup cherry tomatoes (halved)

1 cup shredded cheese (cheddar or mozzarella)

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Fresh herbs for garnish (optional, like parsley or chives)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent. Then, add the diced bell pepper and spinach, cooking for another 3-4 minutes until the spinach wilts and the peppers soften. Remove from heat and let cool for a few minutes.

      Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, cottage cheese, garlic powder, dried oregano, salt, and pepper until well combined.

        Combine Ingredients: Fold the sautéed vegetables into the egg and cottage cheese mixture. Gently stir in the halved cherry tomatoes and half of the shredded cheese.

          Transfer to Baking Dish: Grease a 9x9 inch baking dish (or any oven-safe dish) with cooking spray or a small amount of olive oil. Pour the egg and vegetable mixture into the dish, spreading it evenly.

            Top with Cheese: Sprinkle the remaining shredded cheese over the top.

              Bake: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the edges are golden brown and the center is set. You can check for doneness by inserting a toothpick or knife in the center – it should come out clean.
