1 lb ground beef (or ground turkey)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or canned)

1 can (10 oz) diced tomatoes with green chilies

1 cup shredded cheddar cheese

1 cup cornmeal

1 cup buttermilk

2 large eggs

1/4 cup sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

Fresh cilantro and avocado slices for garnish

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Cook the Meat: In a large skillet, cook the ground beef (or turkey) over medium heat until browned. Drain any excess grease. Add the diced onion and minced garlic, cooking until softened, about 3-4 minutes.

      Add Seasoning: Stir in the taco seasoning, black beans, corn, and diced tomatoes. Mix well and let it simmer for about 5 minutes until heated through. Remove from heat.

        Make the Cornbread Batter: In a mixing bowl, whisk together the cornmeal, buttermilk, eggs, sugar, baking powder, baking soda, and salt until smooth and well combined.

          Assemble the Bake: In a greased 9x13 inch baking dish, pour half of the cornbread batter into the bottom. Spread the meat mixture evenly over the batter. Pour the remaining cornbread batter over the top, then sprinkle shredded cheddar cheese on top.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted in the center comes out clean.

              Garnish and Serve: Once baked, remove from oven and allow to cool for a few minutes. Garnish with fresh cilantro and avocado slices before serving.
