8 oz. thin spaghetti or soba noodles

3 tablespoons tahini

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated fresh ginger

1 garlic clove, minced

1 tablespoon chili oil (optional, for a kick)

½ cup sliced cucumber

½ cup shredded carrots

¼ cup chopped green onions

2 tablespoons sesame seeds (toasted)

Fresh cilantro leaves (for garnish)

Instructions
 

Cook the Noodles: Start by boiling a large pot of salted water. Add the spaghetti or soba noodles and cook according to package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Prepare the Dressing: In a bowl, whisk together the tahini, soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, minced garlic, and chili oil (if using). Adjust the consistency by adding a little water if it's too thick; it should be creamy but pourable.
