Cold Roasted Zoodle Salad

4 medium zucchini (zoodles)

2 cups cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1 cup mild feta cheese, crumbled

1 avocado, diced

1 bell pepper (any color), diced

1/4 red onion, finely chopped

1/4 cup fresh basil, chopped

1 lemon (juiced)

3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a kick

Prep the Zoodles: Using a spiralizer, create zoodles from the zucchini. If you don’t have a spiralizer, you can use a vegetable peeler to make ribbons. Place the zoodles in a colander, sprinkle with salt, and let sit for about 15 minutes to draw out excess moisture. After 15 minutes, pat them dry with a paper towel.

    Roast the Corn: If using fresh corn, grill or roast the corn on the cob until charred (about 5-7 minutes on the grill). Once cooled, cut the kernels off the cob. If using frozen corn, quickly sauté it in a pan over medium heat until heated through.

      Mix the Dressing: In a small bowl, whisk together the lemon juice, olive oil, balsamic vinegar, salt, pepper, and red pepper flakes (if using) until well combined.

        Combine Ingredients: In a large bowl, combine the zoodles, cherry tomatoes, corn, feta cheese, avocado, bell pepper, red onion, and fresh basil.

          Dress It Up: Pour the dressing over the salad mixture, tossing gently to ensure everything is well coated.

            Chill and Serve: Cover the bowl and refrigerate the salad for at least 30 minutes before serving to allow flavors to meld. Stir gently before serving.
