1 cup quinoa

2 medium zucchinis, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 bell pepper (any color), diced

1 avocado, diced

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

3 tablespoons olive oil

2 tablespoons lemon juice

1 clove garlic, minced

Salt and pepper to taste

Cook the Quinoa: Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the quinoa is fluffy. Remove from heat and let it cool.

    Prepare the Vegetables: While the quinoa is cooking, prepare the vegetables. In a large bowl, add the diced zucchinis, halved cherry tomatoes, chopped red onion, diced bell pepper, and diced avocado.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper. Adjust seasoning to taste.

        Combine Everything: Once the quinoa has cooled, add it to the vegetable bowl. Pour the dressing over the salad and toss gently until all ingredients are well combined.
