1 cup orzo pasta

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 clove garlic, minced

Salt and black pepper to taste

Lemon wedges (for garnish)

Cook the Orzo: In a medium saucepan, bring 2 cups of water or vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the orzo is cooking, chop the cherry tomatoes, cucumber, red onion, and red bell pepper. Place all the chopped vegetables into a large mixing bowl.

      Add Olives and Feta: To the bowl with the vegetables, add the sliced Kalamata olives and crumbled feta cheese. Gently toss to combine.
