1 large cucumber, peeled and grated

1 cup Greek yogurt (plain)

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 tablespoons fresh lemon juice

1 clove garlic, minced

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

Optional: a drizzle of olive oil for serving

Optional: a sprinkle of paprika for garnish

Instructions
 

Start by preparing the cucumber. Peel it and then grate it using a box grater or a food processor. Place the grated cucumber in a clean kitchen towel or cheesecloth, and squeeze out any excess moisture. This helps to keep the dip from becoming too watery.

    In a mixing bowl, combine the Greek yogurt, chopped dill, fresh lemon juice, minced garlic, salt, and black pepper. Stir well until all the ingredients are fully integrated.

      Add the squeezed cucumber to the yogurt mixture. Gently fold everything together until the cucumber is evenly distributed throughout the dip. Adjust the seasoning as needed to your taste.

        For an added touch, if using, drizzle a bit of olive oil over the dip and sprinkle with paprika before serving.

          Transfer the dip to a serving bowl and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld together and the dip to cool.

            Serve with your choice of fresh vegetable sticks, pita chips, or as a flavorful addition to sandwiches and wraps.
