8 oz (225 g) whole wheat pasta (rotini or penne works well)

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1/4 red onion, finely chopped

1/4 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper to taste

Cook Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare Vegetables: While the pasta is cooking, prep the vegetables. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, olives, feta cheese (if using), and parsley.
