8 ounces elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

4 tablespoons unsalted butter

4 tablespoons all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

Salt and pepper to taste

1 cup breadcrumbs (panko recommended for extra crunch)

2 tablespoons olive oil

1/2 cup Parmesan cheese, grated

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente, according to package instructions. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan, melt 4 tablespoons of butter over medium heat. Once melted, add the flour and whisk continuously for about 2 minutes to form a roux. Gradually pour in the milk, whisking constantly to avoid lumps. Cook until the mixture thickens, about 5-7 minutes.
