2 cups cauliflower florets

1 cup carrots, peeled and diced

1 cup broccoli florets

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

3 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Steam the Veggies: In a steamer basket or a separate pot, steam the cauliflower florets, carrots, and broccoli until tender, about 5-7 minutes. Once cooked, use an immersion blender or regular blender to puree the steamed veggies until smooth. Set aside.

      Make the Cheese Sauce: In the same pot you used for the pasta, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for about 1 minute until golden, whisking constantly to avoid burning.

        Add Milk and Spices: Gradually whisk in the milk, continuing to stir until the mixture thickens, about 3-5 minutes. Stir in the Dijon mustard, garlic powder, onion powder, and season with salt and pepper to taste.

          Incorporate Cheeses: Remove the pot from heat and stir in the shredded cheddar cheese and Parmesan cheese, mixing well until completely melted and smooth. Then, fold in the pureed vegetable mixture, ensuring everything is well combined.
