Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Cook the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Sauté the onion, carrots, celery, and garlic until they soften, about 5-7 minutes.

Make the Sauce: Sprinkle the flour over the softened vegetables and stir continuously for 1 minute to cook out the raw flour taste. Gradually add the chicken broth and heavy cream, stirring until the mixture thickens, about 5 minutes.

Combine Filling Ingredients: Stir in the shredded rotisserie chicken, frozen peas, thyme, rosemary, salt, and pepper. Remove from heat and pour the mixture into a greased 9x13 inch casserole dish.

Prepare the Biscuit Topping: Open the biscuit dough and either separate into individual biscuits or roll out and cut into pieces to fit over the top of the filling, depending on your preference. Do not worry if they don't cover the entire surface; they'll expand while baking.

Assemble the Casserole: Place the biscuit pieces evenly over the chicken filling. Use a brush to apply a little beaten egg on top of the biscuits to encourage a golden crust.

Bake: Bake in the preheated oven for 25-30 minutes or until the biscuit topping is golden brown and the filling is bubbly.

Garnish and Serve: Once out of the oven, let the casserole cool for about 5 minutes. Garnish with chopped parsley if desired, then serve warm.
