1 lb ground beef (80/20 for optimal flavor)

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp cumin, 1 tsp paprika, 1/2 tsp oregano, salt & pepper to taste)

1/2 cup water

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

Cook the Beef: In a large skillet over medium heat, add the ground beef and onion. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Use a spatula to break up the meat as it cooks.

    Add Garlic and Seasoning: Stir in the minced garlic and taco seasoning (or your homemade blend). Cook for an additional minute until fragrant.

      Simmer: Pour in the water and stir well. Reduce the heat to low and let it simmer for 5 minutes, allowing the flavors to meld and the mixture to thicken slightly.

        Warm the Tortillas: In a separate skillet, warm the tortillas over medium heat for about 30 seconds on each side, or until they are soft and pliable. Alternatively, you can warm them in the microwave for about 20 seconds wrapped in a damp paper towel.

          Assemble Tacos: Place a generous spoonful of the beef mixture into each tortilla. Top with shredded lettuce, diced tomatoes, cheddar cheese, and a dollop of sour cream.
