Cinnamon Sugar Pretzel Bites

For the Pretzel Dough:

1 cup warm water (110°F - 115°F)

2 tablespoons granulated sugar

1 packet (2 1/4 teaspoons) active dry yeast

2 1/2 cups all-purpose flour

1 teaspoon salt

2 tablespoons unsalted butter, melted

For the Baking Soda Bath:

1/2 cup baking soda

4 cups water

For the Cinnamon Sugar Topping:

1/2 cup granulated sugar

2 teaspoons ground cinnamon

4 tablespoons unsalted butter, melted (for brushing)

Instructions
 

Activate the Yeast:

    In a small bowl, combine warm water, granulated sugar, and active dry yeast. Let it sit for about 5-10 minutes, until it becomes frothy.

      Make the Dough:

        In a large mixing bowl, combine the flour and salt. Once the yeast mixture is ready, pour it into the bowl along with the melted butter. Mix until a dough forms.

          Knead the Dough:

            On a floured surface, knead the dough for about 5 minutes until it’s smooth and elastic. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

              Prepare the Baking Soda Bath:

                In a large pot, bring the water and baking soda to a gentle boil.

                  Form the Pretzel Bites:

                    Preheat your oven to 425°F (220°C). Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Divide the dough into small pieces (about 1 inch each) and roll each piece into a ball.

                      Boil the Pretzel Bites:

                        Working in batches, drop the pretzel bites into the boiling baking soda bath for about 30 seconds. Remove them with a slotted spoon and place them on a parchment-lined baking sheet.

                          Bake the Pretzel Bites:

                            Bake in the preheated oven for 10-12 minutes or until they are golden brown.

                              Add Cinnamon Sugar Topping:

                                While the pretzel bites are baking, mix together the granulated sugar and ground cinnamon in a bowl. As soon as the pretzel bites are out of the oven, brush them with melted butter and toss them in the cinnamon sugar mixture until fully coated.

                                  Serve:
