Cilantro Lime Grilled Chicken Skewers

1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup fresh cilantro, chopped

1/4 cup fresh lime juice (about 2 limes)

3 cloves garlic, minced

1 teaspoon cumin powder

1 teaspoon smoked paprika

1/2 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chopped cilantro, lime juice, minced garlic, cumin, smoked paprika, chili powder, salt, black pepper, and olive oil. Mix well to create a marinade.

    Add Chicken: Add the cubed chicken thighs to the marinade and toss until all pieces are evenly coated. Cover with plastic wrap or transfer to a resealable bag. Refrigerate for at least 30 minutes, or up to 2 hours for stronger flavor.

      Prepare Skewers: If using wooden skewers, ensure they have soaked in water for at least 30 minutes to prevent burning on the grill. Preheat your grill to medium-high heat.

        Assemble Skewers: Thread the marinated chicken pieces onto the skewers, packing them snugly. Leave a little space between pieces for even cooking.

          Grill the Chicken: Place the skewers on the preheated grill. Grill for 5-7 minutes on each side, or until the chicken is cooked through and shows nice grill marks. The internal temperature should reach 165°F (75°C).
