For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

1 teaspoon cinnamon

For the cheesecake filling:

16 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

For the churro coating:

¼ cup granulated sugar

1 tablespoon cinnamon

½ cup unsalted butter, melted (for drizzling)

Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

    Make the Crust: In a medium bowl, combine the graham cracker crumbs, ⅓ cup granulated sugar, melted butter, and 1 teaspoon cinnamon. Mix until the mixture resembles wet sand. Press the mixture evenly into the bottom of the prepared baking pan. Bake in the oven for 10 minutes. Remove and let cool slightly.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat together the softened cream cheese and ½ cup granulated sugar until smooth and creamy. Add in the vanilla extract and mix well. Beat in the eggs, one at a time, until fully incorporated. Finally, add the sour cream and mix until the mixture is smooth.

        Assemble the Bars: Pour the cheesecake filling over the cooled crust in the baking pan, spreading it evenly.

          Bake the Cheesecake: Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center still has a slight jiggle. Remove from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.

            Prepare Churro Coating: In a small bowl, mix together ¼ cup granulated sugar and 1 tablespoon cinnamon.
