To create the perfect chia pudding for your parfaits, start by selecting high-quality chia seeds. These tiny seeds are packed with nutrients and will absorb liquid to create a pudding-like consistency. Begin by combining the chia seeds with your chosen plant-based milk (such as almond, coconut, or oat milk) in a mixing bowl. The ratio should be 1/4 cup of chia seeds to 1 cup of milk.

Ingredients

1 cup unsweetened almond milk (or any milk of choice)

1/4 cup chia seeds

2 tablespoons unsweetened cocoa powder

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

A pinch of sea salt

1 cup fresh strawberries, hulled and sliced

1/4 cup dark chocolate chips (dairy-free if needed)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Chia Pudding: In a mixing bowl, whisk together the almond milk, chia seeds, cocoa powder, maple syrup, vanilla extract, and sea salt until well combined. Let the mixture sit for about 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 2 hours or overnight until thickened.

Prepare the Strawberries: While the chia pudding is thickening, wash and slice your strawberries. If you like, you can toss them with a teaspoon of maple syrup to enhance their sweetness.

Layer the Parfaits: Once the chia pudding is ready, grab clear serving glasses or bowls. Start by adding a layer of the chocolate chia pudding at the bottom of each glass. Follow this with a layer of sliced strawberries, and then another layer of the chocolate pudding.

Top with Chocolate Chips: Sprinkle some dark chocolate chips on the top layer of chia pudding for an extra treat. You could also add a few more strawberry slices for a decorative touch.

Garnish and Serve: If desired, garnish the parfaits with fresh mint leaves. Serve immediately or store in the fridge for up to 2 days.
