1 cup creamy peanut butter

1/2 cup honey or maple syrup

2 cups rolled oats

1/2 cup coconut flour

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup dark chocolate chips

1 tablespoon coconut oil (to help with melting chocolate)

Optional: chopped nuts or sea salt for topping

Prepare the Base: In a large mixing bowl, combine the peanut butter and honey (or maple syrup), stirring until smooth and well mixed.

    Add Dry Ingredients: Gradually add the rolled oats, coconut flour, vanilla extract, and salt to the wet mixture. Stir until a dough forms. The mixture should be thick and slightly sticky.

      Press the Mixture: Line an 8x8 inch baking dish with parchment paper. Pour the peanut butter mixture into the dish and press it down firmly and evenly using your hands or a spatula. Make sure it’s compact.

        Chill the Bars: Place the dish in the refrigerator for at least 30 minutes, or until the mixture is firm enough to cut into squares.

          Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until the chocolate is completely melted and smooth.
