2 cups all-purpose flour

1 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

3 large eggs

1 teaspoon vanilla extract

1 cup whole almonds (toasted)

1/2 cup semi-sweet chocolate chips

1 teaspoon coconut oil (for melting chocolate)

Optional: 1/2 cup chopped pistachios for garnish

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

      Combine Wet Ingredients: In a separate large bowl, beat the eggs and then mix in the vanilla extract.

        Combine Mixtures: Gradually add the dry ingredients to the egg mixture, mixing until just combined.

          Add Almonds: Gently fold in the toasted almonds into the dough. The dough will be somewhat sticky.

            Shape Dough: Divide the dough in half and shape each half into a log about 12 inches long and 3 inches wide on the prepared baking sheet. Flatten the tops slightly.

              First Bake: Bake in the preheated oven for about 25-30 minutes or until lightly golden and firm to the touch. Remove from the oven and let cool for about 10 minutes.
