1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

1 cup pure pumpkin puree (canned or fresh)

2 large eggs

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans for added crunch

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease them.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the granulated sugar, brown sugar, and vegetable oil. Add the pumpkin puree, eggs, and vanilla extract, and whisk until smooth and well combined.

        Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix; it’s okay if there are a few lumps. Fold in the chocolate chips (and nuts, if using).

          Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full to allow room for rising.

            Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of the muffins comes out clean or with a few moist crumbs attached.

              Cool: Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
