The foundation of our delicious pie begins with chocolate chip cookie crumbs. You have the option to make these cookie crumbs from scratch or use store-bought cookies for convenience. If you choose to make them from scratch, prepare your favorite chocolate chip cookie recipe, bake the cookies until they’re golden brown, and then let them cool completely. Once cooled, crush the cookies into fine crumbs using a food processor or a rolling pin. The texture of the crumbs is crucial; they should be fine enough to bind together but still have some substance to create a sturdy crust.

Ingredients

1 ½ cups chocolate chip cookie crumbs (about 15 cookies)

½ cup unsalted butter, melted

2 cups vanilla ice cream, softened

1 cup chocolate chip cookie dough (store-bought or homemade)

1 cup whipped cream

½ cup mini chocolate chips

¼ cup chocolate syrup (for drizzling)

Optional: Chopped nuts for topping

Instructions

Prepare the Crust: In a mixing bowl, combine the chocolate chip cookie crumbs and melted butter, mixing until the crumbs are well coated and the mixture resembles wet sand. Press this mixture firmly into the bottom and up the sides of a 9-inch pie dish to form a crust. Bake in a preheated oven at 350°F (175°C) for 10 minutes or until just golden. Allow to cool completely.

Create the Filling: In another bowl, take the softened vanilla ice cream and mix in the mini chocolate chips. Stir until evenly distributed.

Layer the Dough: Spread the chocolate chip cookie dough into the cooled crust, smoothing it out evenly.

Add the Ice Cream: Pour the ice cream mixture over the cookie dough layer, smoothing the top with a spatula.

Freeze: Cover the pie with plastic wrap and freeze for at least 4 hours or until the ice cream is firm.

Serve: Before serving, remove the pie from the freezer and let it sit at room temperature for about 5-10 minutes to soften slightly. Top with whipped cream, a drizzle of chocolate syrup, and optional chopped nuts.

Slice and Enjoy: Cut into wedges and serve immediately while it's still slightly soft!
