2 ripe bananas, mashed

1/2 cup natural almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup rolled oats

1/4 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips

1/4 cup chopped walnuts (optional)

1/4 cup shredded coconut (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

      Combine the Dry Ingredients: In another bowl, whisk together the rolled oats, cocoa powder, baking soda, and salt.

        Combine Wet and Dry Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Gently fold in the dark chocolate chips, walnuts, and shredded coconut (if using) until evenly distributed.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish. Using a spatula, spread it evenly and press it down firmly to compact the mixture.

            Bake: Bake in the preheated oven for about 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean (with a few crumbs).

              Cool: Allow the bars to cool in the pan for about 10 minutes. Then, use the parchment overhang to lift the bars out of the dish and onto a wire rack to cool completely before cutting.

                Slice and Serve: Once cooled, slice into bars. Enjoy them as a snack or a dessert!
