Chinese Beef and Broccoli

1 pound flank steak, thinly sliced against the grain

2 cups broccoli florets

3 tablespoons vegetable oil, divided

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium recommended)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon brown sugar

1 teaspoon sesame oil

1/4 cup beef broth or water

Cooked rice, for serving

Sesame seeds and sliced green onions, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and a drizzle of sesame oil. Mix well to ensure the beef is evenly coated. Allow to marinate for at least 15 minutes while you prep the other ingredients.

    Blanch the Broccoli: In a pot of boiling water, blanch the broccoli florets for about 2 minutes until bright green and tender-crisp. Drain and rinse under cold water to stop the cooking process. Set aside.

      Prepare the Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce, brown sugar, and beef broth. Set this sauce mixture aside.

        Stir-Fry the Beef: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and stir-fry for about 2-3 minutes until browned but not fully cooked. Remove from the pan and set aside.

          Sauté Aromatics: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

            Combine and Cook: Return the beef to the skillet and pour the sauce over it. Add the blanched broccoli and stir to coat everything evenly in the sauce. Cook for an additional 2-3 minutes, stirring frequently, until the beef is cooked through and the broccoli is heated.

              Serve: Remove from the heat and serve the beef and broccoli over cooked rice. Garnish with sesame seeds and sliced green onions for an extra touch of flavor.
