8 oz short pasta (like fusilli or penne)

1 cup fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (toasted)

2 cloves garlic, minced

1/2 cup extra virgin olive oil

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1/2 cup mozzarella balls, halved (bocconcini)

1/4 cup black olives, sliced

Fresh basil leaves for garnish

Optional: Red pepper flakes for a spicy kick

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Make the Pesto: In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, and garlic. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until the mixture is smooth. Season with salt and pepper to taste.

      Combine Pasta and Pesto: In a large mixing bowl, toss the cooled pasta with the pesto until evenly coated. If it's too thick, add a bit more olive oil to achieve your desired consistency.
