Chilled Bars with Peach

Ingredients
  

2 cups ripe peaches, diced (about 4 medium peaches)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

1 cup Greek yogurt (or dairy-free yogurt)

1 cup rolled oats

1/2 cup almond flour (or any flour of your choice)

1/4 cup coconut oil, melted

1/4 teaspoon salt

1/4 cup chopped nuts (walnuts or almonds), optional

Fresh peach slices and mint leaves for garnish

Instructions
 

In a medium bowl, combine the diced peaches, honey (or maple syrup), vanilla extract, and cinnamon. Mix well and set aside to allow flavors to meld for about 15 minutes.

    Meanwhile, preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal.

      In a large bowl, combine the rolled oats, almond flour, melted coconut oil, and salt. Stir until all the dry ingredients are well incorporated.

        Add the peach mixture (including any juices) to the oat and almond flour mixture. Fold in the Greek yogurt until the mixture is fully combined. If using, add the chopped nuts for an extra crunch.

          Pour the mixture into the prepared baking dish and spread it evenly. Press down gently to compact it.

            Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and the center is set.

              Remove from the oven and let it cool to room temperature. Once cooled, transfer to the refrigerator and chill for at least 2 hours, or until firm.

                Once chilled, lift the bars out using the parchment paper and cut into squares or rectangles. Serve immediately, garnished with fresh peach slices and a sprig of mint.
